Moray and the Maras salt pans are two of the most surprising places in the Sacred Valley, and they're almost always visited together in half a day. They sit in the upper part of the valley, on a plateau between Urubamba and Chinchero, some 50-60 km from Cusco. Though close to each other, they offer very different experiences: Moray amazes with its agricultural engineering, Maras with its almost surreal beauty.
Moray is a set of concentric circular terraces sunk into large depressions in the ground, like amphitheaters carved into the earth. The most fascinating part is that each level has a slightly different microclimate -the temperature varies between the rim and the floor-, which led to it being interpreted as a kind of laboratory or agricultural experiment station of the Incas, where crops would have been tested and adapted.
The Maras salt pans, a few kilometers away, are thousands of stepped salt ponds descending the side of a ravine, fed by a natural spring of very salty water. As the water evaporates in the sun, the salt is left behind, harvested by hand since pre-Hispanic times and still supporting local families. The sight of the white and ochre ponds on the hillside is unforgettable. Moray is entered with the Cusco Tourist Ticket; the salt pans are paid separately because the community runs them. Stand on the upper rim of Moray and let your eye walk down to the floor of the amphitheater: over those few meters of descent, the temperature can change by as much as 15 degrees. The upper rim, exposed to the wind and the cold of 3,500 meters, and the bottom of the funnel, sheltered and warm, live in climates as different as the altiplano and the high jungle. That difference is no accident: it's exactly what the Incas were after when, in the 15th century, they turned some natural hollows in the ground into the most astonishing set of circular terraces in Peru.
Moray sits in the upper part of the Sacred Valley, and instead of the usual straight terraces on a hillside, here the Incas dug and shaped large depressions until they became concentric terraces, fitted like amphitheaters descending towards the center. The main set is several dozen meters deep, and around it there are other smaller depressions built on the same geometric logic.
The work is above all a feat of engineering. Each level is held up by retaining walls and filled with layers of stone, gravel and fertile soil that ensure good drainage even in the rainy season; a system of channels distributed the water without flooding the terraces. But the most astonishing part is the effect the Incas knew how to read and use: the funnel shape, together with the orientation to the sun and the wind, creates stepped microclimates that reproduce, in a single place, much of the range of ecological tiers of the empire. With irrigation under control as well, Moray becomes an ideal setting for experimenting with plants: seeing how different crops behave at different temperatures, humidities and altitudes before spreading them across the Tahuantinsuyo.
The big question about Moray is what exactly it was built for. The most popular answer -and the one most visitors will hear- is that it was a kind of agricultural station or laboratory of the Inca state. On this reading, Inca technicians would have used the microclimates of the terraces to domesticate and adapt species, improve varieties of potato, maize and other crops, and prepare them to grow in the varied regions of an empire that spanned very different climates.
That hypothesis is solid and widely held, but it's worth presenting it for what it is: a well-founded interpretation, not an absolute certainty. Inca culture left no writing, so the function of many sites is reconstructed from archaeology, ethnography and the logic of the landscape. Some specialists qualify or supplement the 'laboratory' idea: they point to possible ceremonial functions -the place as a sacred space tied to the fertility of the earth and to water- and even to an astronomical use, where the shadows and the position of the sun helped mark the farming calendar and the ritual dates.
The most reasonable view is to understand Moray as a site that probably combined several of these dimensions. In the Andean world, the practical and the sacred were rarely separate: experimenting with crops, honoring the Pachamama and watching the sky could all be part of one and the same way of relating to the land. That ambiguity, far from making it less interesting, is part of what makes the place fascinating.
A few kilometers from Moray, the Maras salt pans offer one of the most photographed landscapes in Peru: thousands of stepped salt ponds descending the side of a ravine, forming a mosaic of white, ochre and pink depending on the stage of the harvest. It all starts with a natural spring of very salty water rising from the ground, a legacy of ancient seas trapped in the rock millions of years ago.
The ingenuity of the system lies in its simplicity. The salty water is led through channels to the ponds, laid out in terraces. There, under the fierce high-altitude sun, the water evaporates little by little and leaves a crust of salt that is then scraped up and collected by hand. Each pond belongs to and is worked by families from the community, who share the spring following rules and turns inherited over generations. The workings predate the Incas and are still active today.
Maras salt -including the prized 'fleur de sel'- is a well-known product, and buying it on the spot is a direct way to support the producing families. Walking the edges of the ponds, with the ravine on one side and the dazzling white on the other, makes it clear how well Andean communities learned to read their territory and turn a natural resource into a living that has held up for centuries.
The village of Maras, near the salt pans, reached notable prosperity in colonial times precisely thanks to the trade in salt drawn from the Qoripujio spring. That economic boom was carved into the village's architecture: many old houses still have carved stone doorways with coats of arms, a luxury not often seen in Andean settlements of that size, and testimony to the families made rich by the salt business during the 17th and 18th centuries.
The working of the salt pans, however, is far older than the colonial period: there are signs that the salty spring was already being used before the Incas, and that they organized and expanded the system of ponds as part of their policy of controlling strategic resources, since salt was essential for preserving food and highly valued in Andean exchange. After the Spanish conquest, the communal system of working the pans held, though the Spanish introduced new forms of taxation on salt production.
Today the salt pans are still worked by the families of the Maras community, who organize themselves into an association to manage the allocation of ponds, the harvest turns and the admission charged to visitors, a model of community management that has held almost unchanged over the centuries and represents one of the oldest forms of collective economic organization surviving in the Peruvian Andes.
